Waking up with giggles and smiles & a low fat Zucchini Lasagna recipe!

Up and at ‘em! Zoe crawled in bed with me and mushed my face around while she giggled. Josh was getting ready for work. I drowsily laid there cuddling with her while he gave us his good-bye love. It is actually the best way to start the day!

Zoe and I finally braved getting out of the warm bed to make breakfast. She has had an obsession with peanut butter lately. She wants it on everything!!!! At least it is a healthy obsession. I can’t say I blame her lol

A few nights ago I experimented and made my own zucchini lasagna. I have been on an Italian food kick lately lol. With all the cheese that most recipes boast, I have been trying to figure out a way to have it without so much fat. I knew to do this, I would have to hold most of the cheese.

I was worried this meal was going to be an utter FAIL, but it actually turned out really good!!! Josh is not a fan of Zucchini, so this was also a concern of mine.

So, I started with 2 1/2 Zucchinis. I used a veggie peeler to get thin slices. Some came off in beautiful ribbons and some were just parts lol, but who cares right it is all going in the same pan. ;-)

This was about 1/2 of one Zucchini. I peeled as I went, because I wasn’t sure how much I would need.

From there I mixed 1 cup of low fat cottage cheese and 1 cup of 0% Fage plain Greek yogurt. It makes a ricotta cheese type texture and flavor. I add some seasonings to make it more flavorful too. Things like Garlic powder, basil, oregano, onion powder, and a little kosher salt.

In a pan a brown and season ground turkey burger. We use 93/7 because it is low fat. It weighed out to be 556 grams That is about 1.23 pounds ;-)

I start the layering on the Zucchini on the bottom of a pan sprayed with non-stick spray. Then, I put the cheese mixture down along with some tomato sauce and some meat.

I kept layering util I was on the last serving of my cheese mixture and my meat. Then I added 1/2 cup of spinach and 3 large slices of sweet onions that I separated into rings. I spread those out across the top and of course I did add some cheese on top ;-) I used a low fat Mozzarella. I never buy the fat free stuff, but it is usually not tasty and has stuff in it that I would never feed my family. I added 1 1/3 cup of the shredded cheese, then seasoned again.

The amount of sauce you use throughout will vary on how saucy you like your lasagna. I used about 3 cups, but I wish I had used less just because with the moisture from the zucchini it became runny. I baked it at 375 for about 35 mins. It probably should have been pulled at 25-30 lol but I was playing princess with Zoe.

It wasn’t the prettiest and  the cheese got a little crusty lol I actually like it that way, so it worked out for me ;-)

I was most worried that Josh and Zoe would not like the meal, but they actually loved it! The Macros per slice were perfection! I should have weighed out each slice, but I did not. It sliced up into 8 servings. We were pretty good about making sure each was as equal in size as possible.

The Macros per serving were 232 Calories, 10 Grams of Carbs, 9 Grams of Fat, and 26 Grams of Protein. I was stoked about this ratio, because it meant I could have 2 servings lol. Low in carbs, low in fat, and high in protein, this is the perfect ratio for us when cutting weight!!!! I am SO happy to be able to lasagna back into our meal plans!!!!!!

    • We really enjoyed it! We have been looking for alternative to eating noodles. I try to eat my carbs early in the day, so when dinner comes around I am usually limited lol The Zucchini helped a lot! I saw the kitchen gadget you posted yesterday that makes noodles from veggies. I added it to my Amazon wish list lol That is now a must have ha ha ha ha ha
